Lemon balm has sprung back into a vibrant green growth like no other herb this year. It is full of citrusy flavour and fragrance, and its leaves and stems are smooth and tender. It felt like it’s a good time to do something with it before it gets all woody and furry.
This is a very quick and easy recipe with very few ingredients. Flax seeds are a binding ingredient here, it’s important to let them soak so it gets all gelatinous.
50 g ground almond
100 g semolina
1 tbsp ground flax seed
handful of lemon balm leaves, chopped
40 g sugar
Mix 1 tbsp of flax seeds with 3 tbsp of hot water and leave them until it gets gelatinous.
Grind the almonds if using whole, and mix them with the rest of ingredients.
Take 1 tbsp of the mix and shape a little ball in your hand, and put it on a baking tray.
Cook it in the oven for 10 minutes. Make sure not to overcook it as it might get quite hard in texture and will burn the lemon balm leaves.
The citrusy lemon balm flavour should be predominant. Enjoy!
