This is the time of the year when you can't ignore wild garlic emerging in parks and woodland. At this time of the year it is fresh and green and great for cooking.
Wild garlic is full of vitamin C and A, and minerals including iron, calcium and potassium. Wild garlic also contains ‘uridine’ which may be mood-lifting and good for brain health.
A bunch of wild garlic
A bunch of parsley
100g toasted sunflower seeds
1-2 tbsp lemon juices
A pinch of salt and pepper
Combine all ingredients in a food processor and blend. Add water until you reach your desired consistency. Enjoy!
