EIRA'S VEGAN CAWL



Ingredients

2 Onion

3-4 Carrots

2 Parsnips

1 Swede

4-5 Potatoes (medium)

3-4 Leeks

1/2 Cabbage

20g Dried mint

Water

Salt and Pepper


Method

1. Clean and chop all the veg to roughly the same size. Put into a

large pan and add dried mint, water and seasoning.


2. Put on stove with a lid on the pan and bring to the boil. Turn down

heat and simmer till veg is cooked, about an hour.


3. When veg is cooked, check seasoning.


4. Serve with crusty bread.

(I find that it is even better the next day)
