VEGGIE TALES #2: CHARD DOLMAS

Ingredients

  • Salt

  • 25 chard leaves - larger the better

  • 3 tablespoons olive oil

  • 1 small onion, chopped

  • 3 cloves of garlic, diced

  • 1 large lemon, juiced (approximately 4 tablespoons)

  • 1 cup cooked rice

  • ¼ cup / large bunch of chopped fresh parsley

  • 2 tablespoons chopped fresh dill

To make the filling

- Let rice cool

- Add salt, olive oil, parsley and dill to the rice - this will be the filling


To make dolmas

- Prepare chard by cutting out steam in the shape of a V, with two ‘flaps’ to the side

- Steam chard for 2 minutes approximately

- Place a table spoon of rice filling above the V shape / centre or the chard

- Bring the ends up and over the filling, fold in the sides and roll into a neat cylinder shape. Repeat with all the leaves.

- Serve with tzatziki and enjoy!
