EIRA'S WELSH CAKES



Ingredients

1lb Self raising flour

½Ib Butter

12 lb Caster sugar

Handful of currants

Eggs

Milk

pinch salt


Method

1. Put flour, salt and butter in a bowl and rub together.

2. Add sugar and currants and mix through.

3. Beat eggs and add to dry mix with a little milk and mix

combined. You don't want it to be too wet or dry

till

4. Flour your surface and rolling pin and roll out dough to about

1cm thickness and cut with a pastry cutter.

5. Cook on a pre-heated bakestone or heavy frying pan till golden

in colour on both sides.
